Crush these dried chili’s to spice up your favorite dishes! famous chile-growing town in the world: Hatch, New Mexico. Hatch’s unique combination of high altitude, sandy soil conditions and long, hot growing days produce quality chiles year after year. Bring whole dried pods “back to life” if you soak them in water that’s almost at the boiling point for about 20 minutes. Then, puree the pods into paste for use in sauce, salsa, tamales, flautas, burritos, or a variety of marinades.

Roasted or Not-Roasted and Salted or Unsalted. Pinon nuts are harvested in large numbers only every seven years, making them a rare and sought after treat.

Our pinon nuts are washed, sanitized, and sorted to remove debris and hollow shells. They are then slowly and evenly roasted, cleaned again and very lightly salted for that unique New Mexico pinon flavor.
