Ingredients
- 2 tablespoons Butter or Oil
- 3/4 cup Medium Onion Chopped
- 3 Medium Zuchinni Green and Yellow Cubed
- 1.5 cups Green Chili Sauce
- 2 cups Canned Corn Fresh or Frozen (Drained)
- 1 large Tomato Cubed
- 2-3 cups Water
- 1-3 teaspoon Flour To thicken if needed
- Salt and Pepper To Taste
- 1 cup Shredded Monterry Jack Cheese
- Ground Beef Browned and Drained (Optional)
Directions
In a large skillet, sautè onion and zuchinni in butter (or oil). Add chili sauce, corn, tomato and water. Simmer 15 minutes or unil thoroughly heated. Add flour if too runny. Salt and pepper to taste. Top with cheese and server immediatley once cheese has melted; or place in casserole dish, sprinkle with cheese and bake 5-10 minutes at 350 °F.
