Green Chili Chicken Enchilada Casserole

Ingredients

  • 3 Chicken Breasts cooked and shredded
  • 2 cups Chili Guys Fresh Green Chilis peeled and chopped
  • 1 can 26 oz. Cream of Chicken Soup use cream of chicken can
  • 2 cups Shredded Cheese
  • 1/4 cup Onion chopped
  • 10-15 Corn Tortillas Torn into quarters
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Garlic Powder

Directions

Preheat oven to 350 degrees. Combine chicken, cream of chicken soup, milk, green chili, salt, pepper, and garlic powder in a sauce pan. Bring to a boil and stir. Remove from heat. In a 13×9 inch glass pan layer corn tortillas, chicken and cheese. Add onions to middle layer. Cover with foil and bake for 20 minutes. Uncover and bake an additional 20 minutes or until casserole begins to pull away from side of pan.

Here’s an example of how our chili is brought to you: Chili is ordered in Hatch, New Mexico on Monday afternoon. This is picked the following morning and immediately brought in trucks to the farm. These are then washed in cold water to bring that pulp temperature down 20-30 degrees, sorted and graded, and washed all over again. The chili is placed in sacks or boxes, and on to a refrigerated truck, which is then brought to our facility, where it is placed in large coolers right off the truck until you are in our store to order your bushel to be roasted! That’s why we have the best reputation for the freshest chili in the state.
